Saigon Sweet 'n' Spicy Hot Sauce
The south of Vietnam came into stronger contact with merchant ships from all over Asia and was heavily influenced by the Khmers, Thais, islanders from the southern seas near the equator, then the influence from the French. They were followed by the Americans and then the Vietnamese left their mark. And so food was influenced by the spice trade and also developed a much sweeter taste: natural sugar cane juice can still be found on every street corner and is sold for half the price of a can coca cola.
This sauce is a great introduction to the world of authentic Vietnamese chilli sauce - The floral aroma and tart vinegar blend well with sandwiches, stir-fried eggs, BBQ pork and can also be used as a dipping sauce for Camembert cheese platter.
